Mexican cuisine is primarily a fusion of indigenous Mesoamerican cooking with European, especially Spanish, elements added after the Spanish conquest of the Aztec Empire in the 16th century. The basic staples are native foods, such as corn, beans and chili peppers.
Young Student Chefs from 67+ nations after getting selected from different colleges from 67+ nations, will fly down to India on 26th January (67th republic day for India) to represent their country in a cook-off that will last 4 days starting 29th January to 1st February. The results will be collated and the Grand Finale is scheduled on Monday 1st February 2015 at Kolkata.
My name is Fernando Andrés Guajardo Moguel; I was born on December 26th 1991 in Mexico City. I am a Gastronomy Student at Centro de Estudios Superiores de San Ángel (CESSA) University located in Mexico City. I have had three hobbies in my life: Playing football, listening to music, and cooking; but it was until I turned 15 years old when I decided that I wanted to cook for the rest of my life, so I told my parents I wanted to study Gastronomy.
For me it has been awesome starting the carrier because it has gave me a lot of opportunities and knowledge; for a start, my first internship was on my 2nd semester summer on Bresca Restaurant in Mexico City which lasted for two months until the Chef offered me a full time job. On my 5th semester I studied abroad in Marbella, Spain, where I had another internship in SKINA which is a One Michelin star restaurant. In my return to Mexico after that great experience, I started working at Sud 777, #27 at the “Latin Americas 50 best restaurant”.
My future plans are finish my career, work to gain experience and then open my own restaurant.
